Brand New Cookbook is a Blast From the Past

The show may have left the airways 16 years ago but coming this Fall you can reminisce with official recipes from Friends: The Official Cookbook! This 176 page hardback features over 70 recipes for all cooking skill levels with recipes like Just For Joey Fries, Phoebe's Grandmother's Cookies (although if you've seen the episode you know to just grab a big ole bag of Nestle chocolate chips), Chandler's Milk You Can Chew (which I hope to GOD is ice cream), Rachel's Famous English Trifle (again why?), and Monica's Moist Maker sandwich. The expected release date is September 20 but the book is available to pre-order now on Amazon.





Smells Good Enough to Eat?

If you have trouble with biting your nails then steer clear of Walmart's latest addition to its nail polish line. Sinful Colors' latest is the Sweet and Salty Collection which features six nail polishes that look and smell like actual snack foods. For instance, Donut Even is a glittery white polish reminiscent of rainbow sprinkles, Chocolate Cake is black with shimmery white glitter, Cheese Puff is a saturated looking neon orange that mimics a crumbled texture, and Taco Tuesday is yellow with festive glitter pieces.



Free Pizza For 2020 Grads!

This is one sucky year for Seniors around the world. You've finished a major hurdle and are about to embark on a new chapter in life. Unfortunately, you get to do it without the pomp and circumstance, school trips, proms, parties etc. Well, Pizza Hut along with American dairy farmers, is trying to make the year suck a little less for you. Graduates can now visit the Pizza Hut website to sign up for the Hut Rewards program. Once the account is validated, a coupon for a free pizza will appear which can be delivered, carried out or picked up curbside. The coupon is good through June 4, 2020. So HURRY!



Today is NATIONAL BISCUIT DAY!


So here are a couple of recipes I found for some awesome biscuits and cookies since biscuits mean something else here in the US. Enjoy your weekend, everyone, I'll see you on Monday!





Due to my shellfish allergy I cannot partake of Red Lobster but I'm always hearing people rave about their biscuits. So here's a copycat recipe for you to make at home courtesy of The Slow Roasted Italian!

Copycat Red Lobster Cheddar Biscuits

Prep time: 8 mins

Cook time: 12 mins

Total time: 20 mins

Ingredients
  • 2 cups all-purpose flour

  • 1 tablespoon baking powder

  • 1 tablespoon granulated sugar

  • 1 tablespoon garlic powder

  • 3/4 teaspoon kosher salt, divided

  • 1-1/2 sticks (3/4 cup) unsalted butter, (divided)

  • 1 cup whole milk

  • 8 ounces shredded mild cheddar cheese

  • 1/2 teaspoon dried parsley

Instructions
  1. Preheat oven to 450°F. Line a baking sheet with parchment paper.

  2. Add 1 stick (1/2 cup) of butter in a small microwave-safe mixing bowl. Microwave for 30 seconds or until butter is melted. Set aside.

  3. In a large mixing bowl combine flour, baking powder, sugar, garlic and 1/2 teaspoon salt. Whisk until well combined.

  4. Add melted butter and milk and whisk just until flour is all wet, do not over mix.

  5. Add cheese and fold in with a spoon.

  6. Drop heaping spoonfuls onto baking sheet. Bake for 10-12 minutes, until biscuits are golden brown.

  7. Meanwhile, melt remaining 1/2 stick (1/4 cup) of butter in small mixing bowl. Microwave for 30 seconds or until butter is melted.

  8. Add 1/4 teaspoon salt and parsley. Stir with a pastry brush.

  9. Remove biscuits from oven, brush with melted butter mixture. Serve and enjoy!


Now this is a recipe I definitely want to try! When my husband and I were lucky enough to travel to Hawaii several years ago thanks to the Wounded Warrior Project, we toured the Dole Plantation and discover the sunshiney joy that is Dole Whip. When Disney picked up the recipe a few years later we were overjoyed to be able to enjoy it again so I'm curious to see how good these cookies are. If you use this recipe, definitely drop me a line about how it went and when I get around to make them myself, I'll report back in another post.



Dole Whip Cookies (Yield: 2 dozen)

Ingredients

  • 1/2 c. butter, softened

  • 1/2 c. shortening

  • 1 tsp. vanilla extract

  • 1 1/2 c. sugar

  • 3 large eggs

  • 1 c. crushed pineapple, undrained

  • 1/2 c. hot water to which 1 tsp. baking soda has been added

  • 3 1/2 c. all-purpose flour

  • 3/4 tsp. salt

  • 1 tsp. baking powder

  • Frosting:

  • 1/2 c. cold milk

  • 3 oz. vanilla instant pudding and pie filling, dry from the packet

  • 1/2 c. crushed pineapple, undrained

  • 8 oz. whipped topping

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line cookie sheets with nonstick baking mats or lightly spray them with nonstick cooking spray.

  2. In the bowl of an electric mixer, cream together butter, shortening, vanilla, sugar, and eggs. Add hot soda water and crushed pineapple and mix until incorporated. In a separate bowl, stir together flour, salt, and baking powder.

  3. Add flour mixture to wet mixture and mix, scraping down the sides with a spatula to ensure it's all incorporated.

  4. Drop by heaping spoonfuls onto prepared cookie sheets. The cookies will spread out, so I recommend having just two in each row to leave enough space. Bake for approximately 11 to 12 minutes, or just until the centers are set. You can kind of test by touching your finger in the center and it should start to spring back. Don't overbake! Once cool, store in an air-tight container and they'll get really moist!

  5. For the frosting, add the milk to the bowl of an electric mixer, sprinkle dry pudding mix over, then add crushed pineapple and mix well. Fold in whipped topping and refrigerate until ready to serve cookies.

  6. Frost cookies right before serving and enjoy.
